First of all, I want to use this space to express my condolences to Uncle Tom. He was both Michael’s godfather and uncle. He passed away on February 8th, 2025.
This must be a difficult time for Michael and his family, especially Aunt Annie and the boys. But I believe his love will always live on in the hearts of those who knew him.
The last time I saw him was in July 2024. He was a true gentleman—always kind and respectful. I’m grateful I had the chance to meet him and will always remember his classic Ohioan warmth and hospitality.

Now, back to the food. While Michael is away in Ohio, I cook one of my all-time favorite comfort meals at home: Thai Basil Chicken (Pat Kaphrao Gai).
It’s been a favorite of mine since I was a kid, and honestly, it still is. No matter how much time passes, Thai Basil Chicken remains one of those dishes that hits the spot. It’s the ultimate go-to meal, and you’ll find it on the menu of every street food stall and local eatery in Thailand. While cooking it, I couldn’t help but think of Michael. ❤️🐨
That’s why Phat Kaphrao Gai is basically love on a plate, isn’t it? 💞
I served it with mulberry rice and a boiled egg—wholesome and full of nutrients!
You will get some heat, a punch of white pepper, and just the right amount of saucy stuff—not too dry, not too wet. Feel free to swap chicken for pork as you like. I added long beans because they were in the fridge. I got to respect the ingredients and make the most of what I have.
But hey, throw in whatever veggies you like—no rules here, my friends.
